Garden of earthy delights

A couple of edible things have grown in my garden! I’d like to say that I’ve grown them, but the fact is, my contribution to this state of affairs was pretty negligible and they’ve done it all by themselves. Because that is precisely what they are designed to do failing any interference with the natural process. So I was briefly the proud owner of a couple of home-grown beetroot. There are a few more on the way and I’m looking forward to seeing them soon.

Now that I’ve boasted about the beetroot, I feel a bit obligated to provide some sort of recipe, though this was certainly not the intention. And I certainly have no pictures to show for it. One of my favourite things to do is take a couple of baby beetroot (raw), peel them and grate or shred them into thin strands. Then mix with a hint of salt, a bit of fresh lemon juice and some finely chopped fresh mint. And voila, an impromptu side salad to accompany a summer meal.

Oh, I also attempted to grow some carrots but the slugs seem to have got to all of them. This is what remained. Can you spot the carrots?

And for my next trick, I’m looking forward to what my raspberry plant will produce – it’s currently looking promising but is an autumn cropping variety so some more weeks to wait.
