The easiest tartare sauce ever

This tartare sauce recipe is so easy, I’m almost embarrassed to post it. And truth be told, I could work harder, I could (should) make mayonnaise from scratch and get hold of fresh herbs. And while all that is good, it’s not essential if you want a tasty and super quick tartare sauce in under five minutes.

For example, what does one eat with a simple piece of baked fish? I know lots of people don’t like fish, which doesn’t really make sense to me but ok, I’m not really appealing to those people here. This evening I bought a whole trout (it was on special offer, obvs). Seasoned that, wrapped in a parcel made of baking parchment, with a few pieces of sliced garlic, a couple of pieces of lemon, a small handful of parsley and a splash of olive oil and salt thrown in, wrapped tightly and chucked in the oven for 20 minutes at 175 degrees (fan oven – 190 regular oven). Easy peasy. What to have with it then? A few boiled new potatoes with salt and olive oil and a salad, with a tartare sauce for the fish, naturally.

Why is the tartare sauce you can buy in a jar so absolutely revolting? What do they even taste of? The picky Englishman has been banging on at me for ages to make this stuff myself and I have resisted, thinking there was some level of difficulty involved. How totally, utterly wrong I was. I mean, yes, it could be harder if I made everything from scratch but it was late and I was hungry and I didn’t. Sometimes you just need a meal and fast and the making everything from scratch just needs to happen another time. This stuff was quick and simple and it went down really well.

Ingredients
  • 2 tbsp mayonnaise shop bought
  • 4-5 cocktail gherkins, finely chopped
  • 2 tbsp capers, finely chopped
  • 1/4 tsp dijon mustard
  • 1-2 tsp fresh lemon juice
  • 1 pinch salt

  1. Mix mustard and lemon juice with the mayo. Then mix in the chopped gherkins and capers. Add pinch of salt. Mix well and taste. Add more lemon juice or salt or any other ingredient to suit your liking. Done.
